Buttermilk Cornbread




*Such a quick and easy bread, great for family dinners, potlucks, anything other than your local health food meeting. ;) *

1/2 Cup Butter
1/2 Cup Brown sugar
2 Eggs
1 Cup Buttermilk
1/2 Tsp Baking soda
1 Cup cornmeal
1 Cup flour
1 Cup creamed corn

Heat oven to 375. Melt butter in cast iron skillet. If you don't have a cast iron skillet, stop cooking this and go get one. Well, not really, but you should. You could use a regular skillet at this point. After butter is melted, remove from heat and quickly stir in sugar. Then stir in eggs. Mix in remaining ingredients until it is almost smooth with little to no lumps left. If you are using cast iron, go ahead and pop it in the oven now. If not, pour into greased square baking pan. Bake about 30-35 minutes until toothpick comes out clean. Cut into squares and serve with honey or honey butter.
